The mushrooms are grown at our farm in Schleedorf in old fruit cellars. You can find a more detailed explanation of how our mushrooms are bred here. What inspired us from the beginning of mushroom farming is the opportunity to produce high-quality food in rooms that are difficult to use anywhere else and in a very small space. The mushrooms grow on straw and sawdust. While other companies see only an additional cost factor in these residues, we are amazed every day how quickly the mushrooms are converting these materials into something completely new. Do you already have experience or want to grow mushrooms for sale? Then our workshop isBuilding your own low-tech mushroom farm“Exactly the right one for you. This will discuss in detail what you need to start your own mushroom breeding in a small to medium-sized setting.
All equipment and materials are provided by us. You bring a little something for your lunch snack (small snacks and drinks are available). Since we will spend part of the workshop outdoors, please pack clothes adapted to the weather.
Cancellation is possible free of charge up to 14 days before the start of the course. In the event of a later cancellation, a cancellation fee will be charged, which amounts to 50% of the course fee. In the event of a cancellation 48 hours before the start of the course, the entire course fee must be paid. The nomination of a substitute participant is possible. A date can be changed up to 7 days before the start of the course.

Since there is a living organism in the fresh and mushroom box, we recommend starting the box immediately after receiving it. If this is not possible, the box can be stored in a refrigerator or in a cool, dry place for up to 3 months without direct sunlight.
If mushrooms are already growing in the box during storage, the fresh mushroom box can still be used normally. Unfortunately, since the fungi are a living organism, this cannot be ruled out. We therefore recommend starting the box as soon as possible after receipt.
If the substrate sack is white, it is the mycelium of the oyster fungus. Then everything is fine. If a fabric with a different color grows on your substrate bag, it may be mold. In this case, please send us a photo of it to office@stoffn.at. After harvesting the first, second or third wave, mold will form after some time, as with other foods. By then at the latest, you should compost the substrate of your fresh mushroom box or dispose of it in the organic waste.
The substrate bag should remain in the cardboard box. If the substrate is already very dry after the 2nd or 3rd harvest wave, you can remove the sack and place it in a water bowl with the “X” down for 6 – 8 hours. As a result, the substrate absorbs moisture again and another wave may be harvested.
We guarantee you a harvest wave. If this does not grow, please send us a photo of your box to office@stoffn.at and we will try to help you or replace the box for you. Depending on the indoor climate and care with which you treat your fresh mushroom box, 2 – 4 more harvest waves are also possible. Then you can take the substrate block out of the cardboard and the plastic bag and bury the garden and water it extensively. If you’re lucky, you can harvest more mushrooms from there in spring and autumn.
The contents of the substrate sack is a valuable flower fertilizer and can also be composted. Alternatively, the substrate can also be disposed of in the organic waste.
The substrate consists of sawdust, wheat bran, plaster and water and is 100% organic and vegan.
Spray a little water twice a day behind the flaps of the “X” and later on the fruiting mushrooms. In a dry apartment (often in apartments with underfloor heating) we recommend spraying the mushrooms and the substrate behind the “X” 3 – 5 times a day. In general, it is too dry for the mushrooms during growth than too humid. It really can’t be moistened too much.
The plastic tabs should remain on the substrate bag in order to keep the moisture in the substrate bag as far as possible. If you accidentally cut off the flaps, you can also glue a plastic film with an adhesive strip over the window. You can always lift this plastic foil slightly to spray the substrate bag and later the mushrooms with water.
In most cases there is also a second harvest wave. After harvesting the first wave, it will take 2-4 weeks for mushrooms to come again. There is often a third harvest wave, which comes at the earliest 1 – 2 months after harvesting the second wave.
We guarantee you a harvest wave, if this fails, you will of course get a new box immediately. The second and third waves also depend heavily on your room conditions.
If you don’t have a spray bottle, you can alternatively put the fresh mushroom box with the window facing up horizontally and carefully drip water over the substrate or the fresh mushrooms with a spoon.
All alcohol-soluble substances are extracted from the mushrooms first and then all hot water-soluble ones. As a result, all the important active ingredients are extracted from the mushrooms and only the fiber material remains.
The cell walls of fungi are made of chitin. Most of the interesting active ingredients are in these cell walls. Since chitin cannot be digested by the human body, the active ingredients are also very difficult to detach. By the extraction, on the other hand, the active ingredients have already been removed from the mushroom cells and are therefore bioavailable for the body very quickly.
In order to achieve the same effect as by taking extracts, very large amounts of fresh mushrooms would have to be eaten.
Nevertheless, it is advisable to eat fresh mushrooms. In traditional Chinese medicine, the consumption of 150 g of fresh mushrooms per day is recommended.
Since the extract substances in the liquid extracts are already dissolved, they can be absorbed by the body very quickly. A large proportion of the active ingredients are already absorbed through the oral mucous membranes when taking liquid extracts. The capsules, on the other hand, first have to be dissolved by the body and the active ingredients are only absorbed in the intestines.
In the case of mushroom powder capsules, too, the body must first dissolve the capsule shell and then the active ingredients have to be removed from the cell walls. In the extracts, on the other hand, the active ingredients have already been dissolved. In order to achieve the same effect with mushroom powder, much larger amounts must be consumed.
All alcohol-soluble substances are extracted from the mushrooms first and then all hot water-soluble ones. The extraction parameters differ depending on the type of mushroom and were first taken from Chinese scientific studies and further developed with European pharmacists.

For Lion’s Mane, Reishi, Shiitake and Pleurotus, the cultures of Stoff’n are made and raised in their own company and in a partner company in a neighboring town. The Chaga mushrooms come from the Scandinavian wild collection. Cordyceps comes from a European partner company.
In traditional Chinese medicine and also in modern science, the vast majority of the studies refer to the use of the fruiting body. Breeding the fruiting body requires a much more effort than breeding the pure mycelium. This also contains much higher concentration of master-researched substances (polysaccharides and beta-glucans) than the mycelium.
As has been known at the latest since the nuclear accident in Chernobyl, fungi exclude radioactivity and toxins from the environment very easily. If the fungi are grown in countries that do not meet our environmental standards, the resulting products often contain higher loads than are permitted by European limits.
Our mushroom extracts are regularly checked for heavy metal pollution, bacterial contamination and over 200 pesticides by a leading Europe-wide laboratory. We will be happy to send you the laboratory reports on request.
For the best effect, the mushroom extracts should be taken on an empty stomach in the morning. If this is not possible, the intake can also take place throughout the day or at other times. Reishi can also be taken in the evening. Cordyceps should not be taken in the evening, otherwise the energizing effect can lead to sleep problems.
For the best effect, the extracts should be taken directly into the mouth and rinsed around for a few minutes. As a result, the active ingredients are absorbed through the oral mucosa. If the taste is too intense for you, the extract can also be dissolved in a glass of cold or hot water, muesli or smoothie.
Alcohol is an extremely effective solvent and ideal for extracting plant or fungal ingredients. Alcohol removes many more active ingredients from a substance than comparable solvents such as glycerol or vegetable oils.
In addition, alcohol is a very good natural preservative and increases the shelf life of the liquid extract.
A daily portion of 1.65ml contains 0.375ml alcohol, which is less than a glass of apple juice or even a ripe banana.
Pleurotus (Austernseitling), Reishi (shiny lacquerporling), Lion’s Mane (hedgehog beard) and chaga (Slate Schillerporling) can also be found in native forests, albeit very rarely. Shiitake mushrooms originally come from Japan and are not native to us. The Cordyceps sinensis we offer grows originally in the Himalayas.
Pleurotus (Austernseitling), Lion’s Mane (hedgehog beard) and Shiitake mushrooms are also popular edible mushrooms and can be prepared in a variety of ways. Reishi, Chaga and Cordyceps have always been used only for their medicinal effects and originally poured into a tea. The consistency of these mushrooms is very hard, the mushrooms cannot be chewed and even crushed with special machines.
The effect is different depending on the person. While some people notice improvements after just two weeks of regular use, it usually takes about three months for an improvement in the respective condition.
After about 3 months of use, a break of one week should be taken.
For pregnant and breastfeeding women, we recommend consultation with the doctor.
Even if the extracts are generally well tolerated, cross intolerances can occur with certain medications. Before taking the mushroom extracts, they should be clarified with your doctor or pharmacist.
Mushrooms or mushroom extracts are generally very well tolerated. If physical reactions occur after taking it, further use should be avoided. Cordyceps should not be taken in the evening due to the energizing effect.
Only a high-quality raw material guarantees a high-quality extract.

In contrast to most dietary supplement manufacturers, our mushrooms grow in Europe and for the most part even in Austria. 99% of the mushrooms and the extracts made from other dietary supplement manufacturers come from China.
Unlike other producers, our extracts come from the fungal fruit body. Only in the case of the Cordyceps does the product come from the mushroom mycelium. Mycelium has always been used for this fungus and breeding of the fruiting body has not yet been successful worldwide.

The mushroom brood is ideally stored in a clean refrigerator at 2 – 4 °C.
Even if mushroom brood is densely grown and older, it can usually still be used. The first phase of degradation can be recognized by the fact that a yellow or colorless liquid forms. In this phase, the mushroom brood can still be used. After some time, however, the so-called autolysis sets in, i.e. the mushroom brood destroys itself and the bond between the individual grains is completely dissolved. In this phase, the mushroom brood must be disposed of.

We have many different recipe ideas here put together for you. The mushrooms develop their taste best if they are briefly fried at high temperatures. For quick dishes, the fried mushrooms can simply be combined with other vegetables, rice and pasta. Of the many delicious mushroom dishes that we have already tried, the oyster mushrooms in cheese and egg cover and the fried garlic mushrooms are our clear favorites.
Of course, it depends on the personal preference for mushroom dishes. But we can give you some guidelines: If you want to cook a mushroom dish for 2 people, you are well taken care of with the 500g pack. For a mushroom dish for the whole family, 1000g is a good choice. If the mushrooms are only used as a side dish, we recommend a 200g pack for 2 people and a 500g pack for a family.
The mushrooms should simply not be kept covered in the cardboard tray in the fridge.
The mushrooms should be boiled within a week from the date of purchase.
The “white mold” is the mycelium of the oyster mushroom
and sometimes forms on the surface of the mushroom. The mushrooms can
be eaten without hesitation.
