Mushroom cultivation

Our mushrooms are grown on our farm in Schleedorf, in old fruit cellars. A detailed explanation of how we cultivate our mushrooms can be found here.

What has fascinated us about mushroom cultivation from the very beginning is the ability to produce high-quality food in otherwise difficult-to-use spaces and within a small footprint. Our mushrooms grow on straw and sawdust. While other businesses see these residual materials as just an additional cost factor, we are amazed every day at how quickly mushrooms transform them into something entirely new.

We are always excited to introduce interested individuals to the fascinating world of mushrooms!

The mushrooms are organic-certified by the Salzburg State Control Office (SLK-501). Additionally, we work closely with Bio Austria. We will gladly send you the certificate upon request.

The workshop “Your Mushroom Cultivation for Home” is aimed at beginners in mushroom cultivation. Have you already gained some experience or want to grow mushrooms for sale? Then our workshop “Building Your Own Low-Tech Mushroom Farm” is perfect for you. In this workshop, we will go into detail about everything you need to get started with your own small to medium-scale mushroom cultivation.
All equipment and materials will be provided by us. Please bring a small snack for your lunch (small snacks and drinks will be available). Since we will spend part of the workshop outdoors, please bring clothing suitable for the weather.
Cancellations are possible free of charge up to 14 days before the course begins. For cancellations made later, a cancellation fee of 50% of the course fee will be charged. If you cancel within 48 hours of the course start, the full course fee will be due. Nomination of a substitute participant is welcome. Date changes can be made up to 7 days before the course starts. By registering, you accept our terms and conditions.

Fresh Mushroom Box

Since the Fresh Mushroom Box contains a living organism, we recommend starting it immediately upon receipt. If that is not possible, the box can be stored for up to 3 months in a refrigerator or at a cool, dry place, away from direct sunlight.
If mushrooms start growing during storage, the Fresh Mushroom Box can still be used as usual. Since the mushrooms are a living organism, this cannot be entirely avoided. Therefore, we recommend starting the box as soon as you receive it.
If the substrate bag is white, it is the mycelium of the oyster mushroom. Everything is fine in this case. If a different coloured growth appears on your substrate bag, it could be mould. In this case, please send us a photo at office@stoffn.at. After harvesting the first, second, or third flush, mould can form after some time, just like with other food. By then, you should compost the substrate of your Fresh Mushroom Box or dispose of it in the organic waste.
The substrate bag should remain in the cardboard box. If the substrate is very dry after the 2nd or 3rd harvest wave, you can remove the bag and place it with the “X” side down in a bowl of water for 6-8 hours. This will allow the substrate to absorb moisture again, and it may possibly produce another harvest wave.
We guarantee you one harvest wave. If this doesn’t occur, please send us a photo of your box at office@stoffn.at, and we will do our best to assist you or replace the box. Depending on the room climate and the care with which you handle your Fresh Mushroom Box, 2 to 4 additional harvest waves are also possible. After that, you can remove the substrate block from the box and plastic bag, bury it in the garden, and water it thoroughly. If you’re lucky, you may be able to harvest more mushrooms from there in the spring and autumn.
The ingreditents of the substrate bag are a valuable plant fertiliser and can also be composted. Alternatively, the substrate can be disposed of in the organic waste bin.
The substrate consists of sawdust, wheat bran, gypsum, and water, and is 100% organic and vegan.
Spray a little water behind the flaps of the “X” twice a day, and later on the fruiting mushrooms. In a dry apartment (often the case with underfloor heating), we recommend spraying the mushrooms and substrate behind the “X” 3 to 5 times a day. Generally, it is better for the mushrooms to be a little too dry than too wet during growth. It really can’t be over-humidified.
The plastic flaps should remain on the substrate bag to retain moisture as much as possible. If you accidentally cut off the flaps, you can alternatively stick a plastic film over the window with adhesive tape. You can easily lift this plastic film to spray the substrate bag and later the mushrooms with water.
In most cases, a second harvest wave will also occur. After harvesting the first wave, it takes 2 to 4 weeks for mushrooms to possibly appear again. A third harvest wave often follows, which comes at least 1 to 2 months after the second wave’s harvest.
We guarantee you one harvest wave; if this is missing, you will of course receive a new box right away. The second and third waves also strongly depend on your room conditions.
If you don’t have a spray bottle, you can alternatively lay the Fresh Mushroom Box horizontally with the window facing up and carefully drip water over the substrate or the fresh mushrooms using a spoon.

Mushroom spawn

It depends on many different factors, such as inoculation rate, mushroom species, room conditions, and more.
Mushroom spawn should ideally be stored in a clean refrigerator at 2 – 4°C.
Even if the mushroom spawn is densely colonised and older, it can usually still be used. The first phase of degradation is identified by the formation of a yellow or colourless liquid. In this phase, the spawn is still usable. However, after some time, autolysis begins, meaning the spawn starts to break down itself and the bond between the individual grains completely dissolves. At this point, the spawn must be disposed of.

Fresh mushrooms

We sell our fresh mushrooms for pick-up through our self-service shop. Usually, there are always mushrooms available in the fridge, unless many customers come by suddenly. If you want to be sure, send us a message or contact us at 0664/75093604.

Kitchen & Storage

We have put together many different recipe ideas for you here. The mushrooms best develop their flavour when quickly fried at a high temperature. For quick dishes, these fried mushrooms can be easily combined with other vegetables, rice, and noodles. Of all the delicious mushroom dishes we’ve tried, our clear favourites are the oyster mushrooms in a cheese-egg coating and the fried garlic mushrooms.
Of course, it really depends on personal preference for mushroom dishes. However, we can provide some guidelines: If you want to cook a mushroom dish for 2 people, the 500g pack should be sufficient. For a dish to serve the whole family, 1000g is a good choice. If the mushrooms are only used as a side dish, we recommend a 200g pack for 2 people and a 500g pack for a family.
The mushrooms should simply be stored uncovered in the cardboard tray in the refrigerator.
The mushrooms should be cooked within one week of the purchase date.
The “white mould” is the mycelium of the oyster mushroom and sometimes forms on the surface of the mushroom. The mushrooms can be eaten without concern.
