Oyster Mushroom Vegetable Wok

Ingredients:

  • 400 g oyster mushrooms
  • 2 teaspoons oyster sauce
  • 1 teaspoon soy sauce
  • 1 small bulb of ginger
  • 6 spring onions
  • 2 tablespoons of frying oil
  • 1/4 teaspoon ground Sichuan pepper or black pepper
  • Coriander for decorating

 

Preparation:

  1. Remove the ends of the stems from the oyster mushrooms and cut mushrooms into small pieces.
  2. Separate the spring onions into white and green parts and cut into small pieces. Cut ginger into small pieces too.
  3. Heat the oil in a pan, lightly toast the white spring onions and ginger.
  4. Put the oyster mushrooms in the pan, add the oyster sauce and soy sauce. Don’t turn the mushrooms too often during searing. After 2-3 minutes you should get a nice color.
  5. Sprinkle over the ground Sichuan pepper or black pepper and green spring onions and mix well.
  6. Arrange on a plate and decorate with fresh coriander.

 

Tip: For more aroma, you can add a splash of sesame oil at the end or some chilli for the spiciness.
