Oyster Mushroom Vegetable Wok

    Ingredients:

    • 400g oyster mushrooms
    • 2 tsp oyster sauce
    • 1 tsp soy sauce
    • 1 small knob of ginger
    • 6 spring onions
    • 2 tbsp frying oil
    • 1/4 tsp ground Sichuan pepper or black pepper
    • Coriander for garnish

    Method:

    Trim the ends of the oyster mushroom stems and cut the mushrooms into small pieces.

    Separate the white and green parts of the spring onions and chop them finely. Cut the ginger into small pieces. Heat the oil in a pan and lightly fry the white parts of the spring onions along with the ginger.

    Add the oyster mushrooms to the pan. Stir in the oyster sauce and soy sauce. Avoid stirring or flipping the mushrooms too often while frying. After 2-3 minutes, the mushrooms should develop a nice colour.

    Sprinkle over the ground Sichuan pepper or black pepper, along with the green parts of the spring onions.

    Mix everything well.

    Serve on a plate and garnish with coriander.
