Creamy Oyster Mushroom Soup

ingredients:

  • 250 g oyster mushrooms
  • 1 tbsp butter
  • 50 g diced onions
  • 1 garlic clove
  • 250 ml vegetable broth
  • 1 teaspoon fresh marjoram, chopped
  • 100 g cream fraiche
  • salt & pepper

Preparation:

  1. Wash, clean and roughly dice the oyster mushrooms.
  2. Heat butter in a saucepan. Add onion cubes and garlic and sauté until translucent.
  3. Add oyster mushrooms, sauté briefly and deglaze with vegetable broth.
  4. Simmer the soup over low heat for about 10 minutes.
  5. Season with fresh marjoram, salt and pepper.
  6. Before serving, stir in the crème fraîche and enjoy the soup until creamy.

Tip: Dried oyster mushrooms are great for this recipe! Simply soak in warm water a few hours before the start of the cooking and use the soaking water for the soup – this will make the mushroom taste even more intense.
