Ingredients:
4 eggs
160 g grated Emmental cheese
some salt
250 g oyster mushrooms
Butter for frying
Method:
Crack the eggs and mix them with the grated cheese.
Next, blend everything with a hand blender and season with some salt.
Melt the butter in a frying pan.
Clean the oyster mushrooms, trim away the thick stems, and then dip them into the cheese and egg mixture using a fork before placing them directly into the pan.
Fry on medium heat until golden on both sides.
These pair excellently with a mixed salad drizzled with balsamic dressing.
